AHTA offers Food and Beveragement Management Training

The Antigua Hotels & Tourist Association (AHTA) is hosting an “Effective Food and Beverage Management” workshop that will equip participants with the tools to increase profit margins by streamlining kitchen operations.

The five-day course, being held at Tradewinds Hotel from August 18-22,is geared towards chefs, sous chefs, restaurateurs and anyone involved in managing Food and Beverage operations.

“There is a science to food and making money in food management. To be a good chef you need to understand the control and costing aspects of kitchen management. This is what the Effective Food and Beverage Management course offers,” AHTA General Manager Neil Forrester said.

Esteemed industry veteran, Bill Moore, will facilitate the workshop. Moore is the former director of the Caribbean Hotel Association (CHA) Training Institute and, most recently, the lead judge for TASTE of the Caribbean Culinary Competition.

“Mr Moore has over 40 years of experience in the industry and has plied his trade in establishments throughout the world, including the Caribbean. This workshop is a rare opportunity for residents to study with an industry expert, right here in Antigua,” Forrester said.

The five module training programme includes “menu as the blueprint”, effective recipe development, inventory and practical controls, food and beverage costing procedures and food and beverage marketing and promotions.

The cost per participant is $1,350 for AHTA members and $1,500 for non-AHTA members. The workshop takes place between 9am-3pm daily and lunch will be provided. Registration ends on August 10th.
